Mini Pineapple Upside Down Cake is a perfect single dessert recipe. Make these easy mini pineapple upside-down cakes to have as finger food for parties or even as the finishing touch to a romantic meal.
For this recipe, you can ditch the muffin pan and swap them out for these 4 oz ramekins that fit into your instant pot.
Mini Pineapple Upside Down Cake In The Instant Pot
I love mini cakes and this Mini Pineapple Upside Down Cake is amazing, the pineapplejuice made the cake batter extremely moist and the final result was something that pretty much melted in your mouth, and adding the pineapple slice and the maraschino cherries made it that much better.
Alternatively, you can use crushed pineapple or pineapple tidbits if that is what you have. I used ramekins likethese ramekins to make my cakes.
You can even serve with pineapple on the side.
What Ingredients Are In Mini Pineapple Upside Down Cake?
- pineapple juice
- cooking oil
- yellow box cake
- eggs
- pineapple rings
- maraschino cherries
- brown sugar
- butter
- cooking spray
This is a really simple recipe and if you're like me you have most of these things at home.
The kids devoured them. They were kind of upset that there were not more, I think these would also freeze very well. If you want to freeze them, lay them on a cookie sheet not touching and freeze about 8 hours then remove and place in a freezer-safe bag or bowl.
These are my goto for gatherings and parties where I need a quick and easy finger dessert.
You could also make these in the egg cups too to make a more bite-size muffin desert.

Mini Pineapple Upside Down Cake is a perfect single dessert recipe. Make these easy mini pineapple upside down cakes to have as a finger food for parties or even as the finishing touch to a romantic meal.
Ingredients
- 1 c pineapple juice
- ½ c cooking oil
- 1 yellow box cake
- 3 eggs
- 6 pineapple rings
- 6 maraschino cherries
- ½ c brown sugar
- ¼ c butter
- cooking spray
Instructions
- Spray each ramekin lightly with cooking spray.
- In a large mixing bowl, mix, cake mix, eggs, oil, and pineapple juice till smooth, set aside.
- In the bottom of each cup, put 1 tbs brown sugar and about ½ tbs butter.
- Follow with a pineapple ring and place a cherry in the middle of each pineapple slice.
- Fill each cup ½ full with cake mixture.
- When all cups are full, put trivet down and 1 cup of water in the bottom of your Instant Pot.
- Lock-on lid and make sure the valve is closed.
- Cook on manual high pressure for 8 minutes.
- When you hear the beep, turn the valve to quick release.
- Allow to cool 5 minutes with the lid off your pot.
- Remove them from the pot and turn upsidedown on a plate and enjoy
Notes
You can use pineapple tidbits or crushed pineapples too.

These would be great to make for my daughter's party this weekend. Just a couple of problems. I do have a multi-cooker, but there's no way I can get 8 ramikins in it at one time (not even sure if I could even get four in). I only have four as it is, so I'm wondering if these could be done in batches? Or, do you have an alternative, oven variation of this recipe? I guess I could measure out the cake mix and keep half of it aside for later and just make four. We definitely have enough cherries.

Yes you can do them in batches, just use the same cook time.

In the video it looks like there are only 6, but it calls for 8 pineapple rings and cherries. Does this make 6 or 8? Also, is it the 4 oz or 6 oz ramekins?

I believe mine are 4 ounces, and I'm not sure for a bundt pan.

I did instructions as indicated and my cakes did not turn out/ not cooked enough. Not sure what went wrong.
