What is the difference between jumbo muffins and regular muffins? ›

A jumbo muffin pan is exactly what it sounds like: a big sister to the standard tin, making six oversized muffins instead of 12 regular ones. Each cup in a jumbo pan is roughly 2½ times the size of a basic muffin cup, which makes the tool significantly more flexible and versatile.

Do I have to grease a nonstick muffin pan? The nonstick coating is a game-changer, especially for those muffin tops, but it's still a good idea to grease any baking pan for extra reassurance. Common Cupcake Size Options

Cupcake recipes generally contain much higher levels of sugar and fat. This makes cupcakes sweeter, and juicier with finer crumbs. Muffins usually have fruit, nuts, and other ingredients mixed into the batter to compensate. Because of this, muffins are usually considered healthier than cupcakes.

Greasing the pan is a necessary step even when using a nonstick pan. Whether you're using a bundt pan, cake pan, cupcake pan, or cookie sheet, applying a thin layer of grease to the sides and bottom of the pan will help your baked goods release with ease.

Olive oil spray can be a healthier choice to traditional vegetable oil sprays. Shortening - Shortening is easy to spread with a pastry brush or paper towel and it ensures the same even coat you get with butter. Unlike butter, you will not affect the muffin's flavor.

For this reason, a steel core coated with aluminum (AKA "aluminized steel") is a popular choice. There are also pans made entirely of silicone, which is completely nonstick and can go from oven to fridge or freezer. However, silicone can't conduct heat as well as metal.

As a general rule, the thinner the batter, the lighter the muffins will be when baked. But don't be afraid to bake thick, gloppy batter. It can yield moist muffins with extra keeping power.
